v.2014 Chardonnay, 'GIALLO SOLARE'
Visitors to our estate are always intrigued & charmed by our concrete ‘egg’ fermentors. Originated in the Northern Rhône Valley of France, for use in aromatic white wines, these vessels now appear in top wine estates around the world, where they are used in the fermentation and maturation of both red and white wines.
Concrete is unique in providing a near-perfect combination of gently-oxidative aging, much like a wooden barrel, but without masking the fruit character of the wine inside. The result is a richening and softening of the wine, while intensifying the pure white peach and juicy lime freshness of the fruit.
Our eggs have never seen a commercial yeast or bacteria strain, and are proudly marked ‘NATIVE.’ It has been our practice to age wines within the eggs for one year, then transferring them to inert stainless steel barrels to store another six months for use as a component for blending in our Center of Effort bottling. Only occasionally, we have bottled this component wine separately, as ‘Giallo Solare’ (‘Yellow Sun’) to showcase its uncommon elegance and purity of fruit.
The v.2014 ‘Giallo Solare’ is no exception, with ripe white peach fruit tones, and mineral notes. Only 600 bottles were produced, and we are offering it first to our ‘Insiders’ as a glimpse of the compelling results we are having with this technique.
