Tasting Notes

One of the simplest, but most satisfying wines that we make.  At harvest, we free-drain juice away from the skins of Pinot Noir clusters as quickly as possible, to minimize coloration and bitterness.  Native yeast fermentation in older French oak barrels takes just six to eight weeks before we assemble the new wine in tank and prepare it for bottling in early January.

Very-pale pink/peach tone.  Watermelon and pear-skin aromas, very pure and crisp in the mouth, with some subtle floral & herbal notes that balance the fruitiness.  A complex and very elegant ‘Vin-Gris’ manifestation of the Pinot Noir grape.
